Nje\u017eni i pjenasti \u010dokoladni biskvit, krema od mascarponea i \u010dokoladni ganache su uvijek dobitna kombinacija.<\/p>\n<p>&nbsp;<\/p>\n<p>Ako imate silikonski kalup za rolade tada vam je priprema mnogo jednostavnija. Ja sam svoj prona\u0161la preko <a href=\"https:\/\/favi.hr\/?gclid=EAIaIQobChMInem40KjXggMVgD0GAB20uAcGEAAYASAAEgIw0vD_BwE\">FAVI<\/a> tra\u017eilice namje\u0161taja i dekoracija. Ako nemate L\u00e9ku\u00e9 silikonski kalup za roladu mo\u017eete pripremiti kalup dimenzija 40 x 30 cm. L\u00e9ku\u00e9 silikonski kalup ne treba mastiti, ali ako koristite obi\u010dne kalupe dno im oblo\u017eite papirom za pe\u010denje i namastite uljem u spreju ili tankim slojem maslaca.<\/li>\n<li>U zasebnoj posudi pomije\u0161ajte prosijano bra\u0161no i kakao. Nemojte presko\u010diti ovaj korak te prosijte oboje.<\/li>\n<li>\u017dumanjke pjenasto stucite sa 100 g \u0161e\u0107era i prstohvatom soli. Za ovaj korak \u0107e vam trebati 5 minuta. Neka se \u017eumanjci uduplaju i posvijetle.<\/li>\n<li>Smjesi dodajte prosijano bra\u0161no i kakao pa sve kratko pove\u017eite.<\/li>\n<li>Od bjelanjaka i 50 g \u0161e\u0107era napravite snijeg miksaju\u0107i ih nekoliko minuta.<\/li>\n<li>Snijeg s pomo\u0107u \u0161patule nje\u017eno umije\u0161ajte u smjesu sa \u017eumanjcima. Pomije\u0161ajte iz tri intervala. Prvo dodavanje mo\u017ee biti br\u017ee i intenzivnije, dok druga dva trebaju biti odra\u0111ena nje\u017enim pokretima \u0161patule.<\/li>\n<li>Smjesu oprezno iskrenite na pripremljen lim te je nje\u017enim pokretima poravnajte.<\/li>\n<li>Pecite 13-15 minuta.<\/li>\n<li>Ako koristite L\u00e9ku\u00e9 silikonski kalup tada biskvit ostavite u njemu da se ohladi. Ako koristite klasi\u010dan kalup tada pripremite \u010distu kuhinjsku krpu. Pospite je \u0161e\u0107erom u prahu. Pazite da je cijela krpa ravnomjerno posuta.<\/li>\n<li>Pe\u010deni biskvit oprezno okrenite na krpu, odstranite papir za pe\u010denje pa odmah zarolajte biskvit (rolate u\u017eu stranu) i ostavite da se ohladi.<\/li>\n<\/ol>\n<p>\u010cOKOLADNI GANACHE<\/p>\n<ol>\n<li>\u010cokoladu za kuhanje iskidajte na manje komadi\u0107e i stavite u posudu otpornu na toplinu.<\/li>\n<li>Vrhnje za kuhanje ugrijte do vrenja pa ga dodajte komadi\u0107ima \u010dokolade.<\/li>\n<li>Ostavite dvije minute pa \u0161patulom mije\u0161ajte sve dok vam se smjesa ne spoji i ne dobijete glatku kremu.<\/li>\n<li>Ganache stavite u hladnjak na pola sata pa ga mikserom izradite.<\/li>\n<\/ol>\n<p>KREMA<\/p>\n<ol>\n<li>Listi\u0107e \u017eelatine ili mljevenu \u017eelatinu namo\u010dite u hladnoj vodi. Odvojite malo vrhnja za \u0161lag pa ga s listi\u0107ima ili nabubrenom \u017eelatinom ugrijte na pari ili u mikrovalnoj. Ako koristite instant \u017eelatinu tada ovaj korak presko\u010dite.<\/li>\n<li>Mascarpone i \u0161e\u0107er izradite mikserom. Dodajte vrhnje za \u0161lag (neka vam bude hladno) pa ponovo sve izradite mikserom dok se krema malo ne zgusne, dodajte otopljenu \u017eelatinu ili instant. Pomije\u0161ajte.<\/li>\n<li>Kada vam se krema dovoljno smiksala mo\u017eete je odmah koristiti.<\/li>\n<li>Ako ste koristili L\u00e9ku\u00e9 silikonski kalup tada kremom prema\u017eite biskvit pa zarolajte, ako vam je biskvit zamotan tada ga odmotajte, prema\u017eite kremom te zarolajte.<\/li>\n<li>Manji dio rolade izre\u017eite te postavite sa strane rolade kako bi dobili oblik panja.<\/li>\n<li>Sada cijelu roladu prema\u017eite \u010dokoladnim ganacheom te pro\u0111ite vilicom za realni izgled drva.<\/li>\n<li>Na kraju postavite gljive i pospite \u0161e\u0107erom u prahu.<\/li>\n<li>Poslu\u017eite ohla\u0111enu.<\/li>\n<\/ol>\n<p>MERINGUE GLJIVE<\/p>\n<ol>\n<li>Pe\u0107nicu upalite na 130 stupnjeva. Pripremite lim za pe\u010denje na koji \u0107ete postaviti papir za pe\u010denje.<\/li>\n<li>U posudu stavite bjelanjke sobne temperature, cream of tartar ili ocat i \u0161e\u0107er te miksajte nekoliko minuta dok vam se \u0161e\u0107er ne otopi u snijegu od bjelanjaka. Smjesa \u0107e biti sjajna i \u010dvrsta.<\/li>\n<li>Napunite slasti\u010darsku vre\u0107icu s okruglim nastavkom (ja koristim Wilton A2). Ako nemate nastavak tada samo otkidajte dno vre\u0107ice. Neka vam promjer bude izme\u0111u oko 1 centimetar.<\/li>\n<li>Istiskujte smjesu na papir za pe\u010denje rade\u0107i jedan dio u obliku kruga, a drugi u obliku sto\u0161ca.<\/li>\n<li>Su\u0161ite u pe\u0107nici 50 minuta.<\/li>\n<li>Dnu okruglih puslica od meringue napravite malu udubinu po sredini.<\/li>\n<li>Rastopite \u010dokoladu te vrh sto\u0161ca od puslice postavite na okruglu puslicu tako da vrh u\u0111e u rupicu koju ste napravili.<\/li>\n<li>Ostavite da se \u010dokolada stisne i tako &#8220;zalijepi&#8221; dvije puslice.
