Razlikuju se od klasi\u010dnih brioche krafni po svojoj veli\u010dini. Bomboloni su znatno manji od uobi\u010dajene verzije.<\/p>\n<p>&nbsp;<\/p>\n<p>Ovakve krafnice mo\u017eete prona\u0107i u Italiji odakle i potje\u010du. Kako brioche tijesto sadr\u017ei jaja i maslac, bogato je okusom i teksturom pa bombolone mo\u017eete poslu\u017eiti i bez punjenja.<\/p>\n<p>&nbsp;<\/p>\n<p>Mo\u017eete ih raditi u razli\u010ditim veli\u010dinama. Meni su najdra\u017ei ovakvi, ra\u0111eni s kalupi\u0107em promjera 5 centimetara. Nisu ni premaleni, ali ni preveliki. Kalupi\u0107 od 5 centimetara mo\u017eete prona\u0107i me\u0111u kalupima za keksi\u0107e, moj je od kalupa za linzere.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Ja sam svoje bombolone punila kremom od vanilije. Vi ih mo\u017eete puniti bilo kojom kremom, marmeladom, curdom i sl. Pomije\u0161ajte dobro da se sve pove\u017ee pa prekrijte prozirnom folijom.<\/li>\n<li>Ostavite pola sata na toplom mjestu.<\/li>\n<\/ol>\n<p>TIJESTO<\/p>\n<ol>\n<li>Uzdigli kvas prebacite u posudu od elektri\u010dnog miksera ili obi\u010dnu posudu. Dodajte mu razmu\u0107ena jaja i sve pove\u017eite nastavkom za tijesto. Dodajte koricu naran\u010de.<\/li>\n<li>U zasebnoj posudi pomije\u0161ajte preostalo bra\u0161no, \u0161e\u0107er i sol. Dodajte smjesi kvasa i jaja. Nastavkom za tijesto izradite tijesto nekoliko minuta. Bitno je da se pove\u017ee i da nema suhih dijelova. Sada tijesto ostavite 5 minuta da odmori da se razvije gluten.<\/li>\n<li>Maslac sobne temperature iskidajte na kockice. Nakon \u0161to je tijesto malo odmorilo dodajte kockicu maslaca pa na srednje jakoj brzini nastaviti izra\u0111ivati tijesto. Izra\u0111ujte ga sve dok se maslac ne sjedini s tijestom, tek tada dodajte sljede\u0107u kockicu. Ponavljajte isto dok ne utro\u0161ite sav maslac.<\/li>\n<li>Tijesto nastavite izra\u0111ivati mikserom ili ga prebacite na pobra\u0161njenu radnu podlogu pa ga rukama nastavite mijesiti. Mijesite ga 6-8 minuta, odnosno dok ne postane glatko i sjajno.<\/li>\n<li>Tijesto prebacite u nauljenu posudu i prekrijte prozirnom folijom. Ostavite na toplom dok se ne udvostru\u010di, 1,5 sat do dva sata.<\/li>\n<\/ol>\n<p>OBLIKOVANJE<\/p>\n<ol>\n<li>Tijesto pritisnite kako bi se ispuhao zrak pa ga prebacite na pobra\u0161njenu podlogu.<\/li>\n<li>Tijesto razvaljate na debljinu od 1 centimetra. Koriste\u0107i se okruglim kalupom promjera 5 centimetara utisnite krugove u tijestu.<\/li>\n<li>Formirane bombolone prebacite na lim za pe\u010denje oblo\u017een papirom za pe\u010denje. Napravite razmak izme\u0111u tijesta kako bi moglo narasti. Ostatak tijesta kratko zamijesite, razvaljajte na 1 centimetar i ponovo utisnite kalup. Ponovite dok ne utro\u0161ite sve tijesto.<\/li>\n<li>\u00a0Tijesto prekrijte kuhinjskom krpom i ostavite na sobnoj temperaturi jedan sat, odnosno dok se ne udvostru\u010di.<\/li>\n<\/ol>\n<p>PR\u017dENJE<\/p>\n<ol>\n<li>U lonac s debljim dnom ulijte ulje i pustite da se zagrije. Zagrijano je kada dosegne temperaturu od 170 stupnjeva ili kada uronite drvenu dr\u0161ku i oko nje se krenu stvarati mjehuri\u0107i. Vatru potom smanjite na laganu.<\/li>\n<li>\u00a0U lonac stavite onoliko krafni koliko mogu stati, a da pritom nesmetano mogu plutati. U ulje uronite gornju stranu tijesta (ona koja se nesmetano dizala prilikom odmaranja tijesta). Poklopite lonac kako bi se strana koja je bila polegnuta na papir za pe\u010denje lak\u0161e digla. Pr\u017eite 30-ak sekundi, odnosno dok vam strana uronjena u ulje ne porumeni.<\/li>\n<li>Bombolone okrenite i pr\u017eite otklopljene jo\u0161 30-ak sekundi, odnosno dok i druga strana ne porumeni.<\/li>\n<li>Gotove bombolone prebacite na kuhinjski papir da se ocijedi vi\u0161ak masno\u0107e pa ih potom uvaljajte u \u0161e\u0107er.<\/li>\n<li>Punite ih po \u017eelji.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Dobar tek!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Bomboloni ili malene brioche krafne su neodoljivo mekane i ukusne loptice brioche tijesta.
