To je mekano, pjenasto i bogato tijesto od kojeg mo\u017eete raditi klasi\u010dni i prepoznatljivi brioches\u00a0\u00e0 t\u00eate, ali i razne druge oblike peciva. Jedni od poznatijih su zasigurno cimet rolice, babka, brioche krafne itd.<\/p>\n<p>&nbsp;<\/p>\n<p>Brioche tijesto se razlikuje od ostalih tijesta po koli\u010dini jaja i maslaca koju sadr\u017ei. Uz njih, u svom sastavu ima mlijeko, bra\u0161no, malu koli\u010dinu \u0161e\u0107era, suhi kvasac i sol.<\/p>\n<p>&nbsp;<\/p>\n<p>Brioche tijesta radim po receptu i uputstvima Petera Reinharta. Recept za brioche tijesto u nastavku Peter naziva poor man&#8217;s brioche ili siroma\u0161no brioche tijesto. Postoje male razlike u receptu koji radim od onoga koje se nalazi u knjigama ovog autora, a odnose se na koli\u010dinu \u0161e\u0107era i minimalnu razliku u postotku bra\u0161na i maslaca.<\/p>\n<p>&nbsp;<\/p>\n<p>Ovo tijesto sadr\u017ei 23% maslaca u odnosu na bra\u0161no, a to je ujedno i najni\u017ei omjer maslaca za brioche tijesta. Tako\u0111er, ovo tijesto mo\u017eete pe\u0107i i oblikovati isti dan, ali ga mo\u017eete i dr\u017eati u hladnjaku nakon oblikovanja i pe\u0107i sutradan. Ostala brioche tijesta trebaju odmarati u hladnjaku jedan dan. Ovo tijesto je pogodno za izradu raznih oblika peciva, divno je mekano i pjenasto, a opet nije pretjerano te\u0161ko niti masno.<\/p>\n<p>&nbsp;<\/p>\n<p>Ostala brioche tijesta mo\u017eemo grupirati dvije skupine. Srednja brioche tijesta imaju 50 % maslaca u odnosu na bra\u0161no i jednako toliko jaja u odnosu na bra\u0161no (jaja se mjere u gramima, a jedno L jaje ima cca 60 grama).<\/p>\n<p>&nbsp;<\/p>\n<p>Bogata brioche peciva su ona peciva od kojih se rade prepoznatljivi\u00a0<span style=\"display: inline !important; float: none; background-color: #ffffff; color: #666666; cursor: text; font-family: 'Open Sans',Arial,sans-serif; font-size: 14px; font-style: normal; font-variant: normal; font-weight: 500; letter-spacing: normal; orphans: 2; text-align: left; text-decoration: none; text-indent: 0px; text-transform: none; -webkit-text-stroke-width: 0px; white-space: normal; word-spacing: 0px;\">brioches\u00a0\u00e0 t\u00eate. Oni u svom sastavu sadr\u017ee preko 70 % maslaca u odnosu na bra\u0161no te nekakvih 50 % jaja.\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p>Ovakva tijesta se spremaju u hladnjak na 12 sati prije oblikovanja te su iznimno pjenasta, bogata okusom i mekana.<\/p>\n<p>&nbsp;<\/p>\n<p>Za sva brioche tijesta koristim spu\u017eva kvas u istim omjerima i spremam ga na isti na\u010din. Kada jednom savladate tehniku vidjeti \u0107ete koliko je priprema ovakvog tijesta jednostavna, a mogu\u0107nosti zaista velike.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Ovaj recept vam mo\u017ee poslu\u017eiti za razne oblike i punjenja. Prilagodite ga svojim \u017eeljama. glatkog bra\u0161na<\/li>\n<li>7 g suhog kvasca (1 vre\u0107ica)<\/li>\n<li>115 g mlakog mlijeka ( 35-38 stupnjeva)<\/li>\n<\/ul>\n<p>TIJESTO<\/p>\n<ul>\n<li>4 jaja L veli\u010dine<\/li>\n<li>420 g glatkog bra\u0161na<\/li>\n<li>60 g \u0161e\u0107era<\/li>\n<li>9 g soli (1 \u017eli\u010dica soli)<\/li>\n<li>115 g maslaca sobne temperature<\/li>\n<\/ul>\n<h5>PRIPREMA<\/h5>\n<p>SPU\u017dVASTI KVAS<\/p>\n<ol>\n<li>Za kvas pomije\u0161ajte bra\u0161no i kvasac pa dodajte mlako mlijeko.<\/li>\n<li>Dobro sve promije\u0161ajte i pokrijte prozirnom folijom. Neka vam kvas fermentira pola sata do 45 minuta. Kada primijetite da je kvas narastao, taknite mu sredinu, treba pasti. Kvas mo\u017eete koristiti.<\/li>\n<\/ol>\n<p>TIJESTO<\/p>\n<ol>\n<li>Kvas prebacite u posudu od elektri\u010dnog miksera ili u obi\u010dnu posudu. Kvasu dodajte prethodno umu\u010dena jaja te ih umije\u0161ajte mikserom ili pjenja\u010dom.<\/li>\n<li>U zasebnoj posudi pomije\u0161ajte bra\u0161no, \u0161e\u0107er i sol pa ih dodajte smjesi kvasa i jaja.<\/li>\n<li>Nastavkom za tijesto sve pove\u017eite i nastavite izra\u0111ivati nekoliko minuta.<\/li>\n<li>Ugasite mikser i ostavite tijesto 5 minuta da miruje i da se gluten polako razvije.<\/li>\n<li>Maslac sobne temperature podijelite na nekoliko manjih komada pa ga dodajite komad po komad.<br \/>\nNeka vam cijelo vrijeme mikser s nastavkom za tijesto radi na srednjoj brzini. Pazite da vam se maslac potpuno stopi s tijestom prije nego dodate novu kockicu.<\/li>\n<li>Kada ste nadodali sav maslac nastavite miksati 6-8 minuta, odnosno dok vam tijesto ne bude mekano i sjajno. Po potrebi dodajte malo bra\u0161na, ali pazite da ne dodate previ\u0161e.<\/li>\n<li>Tijesto prebacite u nauljenu posudu koju \u0107ete prekriti prozirnom folijom. Ostavite na toplom mjestu dok se tijesto na udvostru\u010di, oko dva sata.<\/li>\n<li>Tijesto pritisnite \u0161akom po sredini kako bi iza\u0161ao zrak. Prebacite ga na pobra\u0161njenu radnu podlogu.<\/li>\n<li>Sada tijesto razvaljajte na debljinu od oko 5 milimetara, mo\u017eete ga ostaviti i debljim pa ga razvaljati na 1 centimetar.<\/li>\n<li>Razvaljano tijesto prema\u017eite \u017eeljenim nadjevom. Ja sam dio tijesta premazala maslacem, posula \u0161e\u0107erom i cimetom, a dio sam premazala \u010dokoladom i posula tostiranim i krupno sjeckanim lje\u0161njacima.<\/li>\n<li>Tijesto zarolajte tako da rolate du\u017eu stranu. Sada imate osnovni oblik za sva peciva.<\/li>\n<\/ol>\n<p>ZA ROLICE<\/p>\n<ol>\n<li>Zarolano tijesto kidajte uzdu\u017eno na komade debljine 2 do 3 centimetra.<\/li>\n<\/ol>\n<p>ZA ZAVIJENA PECIVA<\/p>\n<ol>\n<li>Razvaljano tijesto pritisnite valjkom i lagano ga poravnajte. Kidajte trake (uzdu\u017ene za manja peciva ili vodoravne za nekoliko ve\u0107ih). Tijesto zarolajte i napravite oblik po \u017eelji. Mo\u017eete napraviti oblik \u010dvora i sl.<\/li>\n<\/ol>\n<p>ZA BABKU<\/p>\n<ol>\n<li>Razvaljano tijesto prepolovite uzdu\u017eno po sredini. Polovice postavite u oblik slova X. Krenite s gornjom stranom plete\u0107i pletenicu tako da polovice vrtite jednu oko druge. Isto ponovite s donjom stranom slova X. Ispletenu babku mo\u017eete raditi i s tri komada tijesta. Savjetujem da za takvu babku koristite \u0161ire zarolano tijesto kako bi svaki komad bio dovoljno \u0161irok. Babku s tri trake pletite kao klasi\u010dnu pletenicu.<\/li>\n<\/ol>\n<p>ZA VIJENAC BABKU<\/p>\n<p>Sve radite isto kao i kod klasi\u010dne babke. Na kraju ispleteno tijesto spojite u krug. Kod vijenca babke koristite du\u017ee zarolano tijesto kako bi vijenac imao dovoljno velik promjer kada ga spojite. U protivnom vam se tijesto prilikom odmaranja i rasta mo\u017ee spojiti u sredini.<\/p>\n<p>PE\u0106NICA<\/p>\n<ol>\n<li>Kada ste pripremili \u017eeljene oblike poslo\u017eite ih na lim za pe\u010denje koji ste prethodno oblo\u017eili papirom za pe\u010denje. Napravite razmak kako bi nesmetano mogli rasti.<\/li>\n<li>Babku stavite u kalup za kruh koju ste prethodno oblo\u017eili papirom. Ako vam je babka du\u017ea od kalupa tada je malo zbijte prilikom stavljanja u kalup. Ako nemate kalup za kruh, babku mo\u017eete pe\u0107i na limu za pe\u010denje.<\/li>\n<li>Pripremljena peciva prekrijte prozirnom folijom. Ako ih \u017eelite pe\u0107i drugi dan, spremite ih u hladnjak na 12-36 sati.<\/li>\n<li>\u00a0Ako su vam pripremljena peciva u hladnjaku izvadite ih dva sata prije pe\u010denja. Ako ih odmah pe\u010dete tada ih ostavite pokrivene jedan sat da se uduplaju. Po \u017eelji peciva mo\u017eete posuti kristali\u0107ima \u0161e\u0107era, sjeckanim ora\u0161astim plodovima i sl.<\/li>\n<li>Pe\u0107nicu ugrijte na 180 stupnjeva.
