To je zasigurno moje najdra\u017ee godi\u0161nje doba. Osim predivnih boja, za\u010dina, ki\u0161e (da, volim ki\u0161u), donosi i zrele ora\u0161aste plodove.<\/p>\n<p>&nbsp;<\/p>\n<p>Slastice s njima obo\u017eavam. Imaju mi puno\u0107u okusa, svoju te\u017einu i povijest. Skoro pa svi recepti koje sam naslijedila od baka sadr\u017ee neki od ora\u0161astih plodova. Sje\u0107am se da je djed uvijek govorio da kola\u010d nije kola\u010d ako nema oraha.<\/p>\n<p>&nbsp;<\/p>\n<p>Radili neki tradicionalni kola\u010d ili moderniju verziju slastice, jesen \u0107e je sa svojim plodovima sigurno oplemeniti.<\/p>\n<p>&nbsp;<\/p>\n<p>Dacquoise kore su beze kore kojima su nadodani bademi ili lje\u0161njaci. Ja sam radila tri dacqouise kore s lje\u0161njacima.<\/p>\n<p>&nbsp;<\/p>\n<p>Torta ima kombinaciju dvije kreme. Jedna je klasi\u010dna \u010dokoladna, a druga nje\u017enija karamel krema.<\/p>\n<p>&nbsp;<\/p>\n<p>Kod odabira krema se mo\u017eete poigrati. Mo\u017eete kombinirati \u010dokoladni ganache, slasti\u010daraku kremu, tu\u010deno vrhnje ili po \u017eelji.<\/p>\n<p>&nbsp;<\/p>\n<p>Ja sam koristila dulce de leche karamel koji sam nadodala tu\u010denog vrhnju kako bi dobila karamel kremu. Vi ovaj dio mo\u017eete presko\u010diti i u vrhnje nadodati malo arome vanilije i lje\u0161njaka. gustina i 1 \u017eli\u010dicom alkoholnog octa)<\/li>\n<li>200 g \u0161e\u0107era<\/li>\n<li>150 g lje\u0161njaka (tostirani i mljeveni)<\/li>\n<li>20 g kakao praha (nezasla\u0111enog)<\/li>\n<\/ul>\n<p>\u010cOKOLADNA KREMA<\/p>\n<ul>\n<li>500 ml mlijeka<\/li>\n<li>1 mahuna vanilije (mo\u017eete koristiti vanilin \u0161e\u0107er li aromu vanilije)<\/li>\n<li>4 \u017eumanjka (60 g)<\/li>\n<li>100 g \u0161e\u0107era<\/li>\n<li>prstohvat soli<\/li>\n<li>50 g gustina (\u0161krobno bra\u0161no)<\/li>\n<li>40 g maslaca sobne temperature<\/li>\n<li>100 g \u010dokolade za kuhanje<\/li>\n<\/ul>\n<p>KARAMEL KREMA<\/p>\n<ul>\n<li>250 g vrhnja za \u0161lag<\/li>\n<li>2 \u017elice <a href=\"http:\/\/bakeme.com.hr\/dulce-de-leche-mlijecni-karamel\/\">dulce de leche karamela<\/a><\/li>\n<\/ul>\n<p>DODATNO<\/p>\n<ul>\n<li>lje\u0161njaci za dekoraciju- tostirani, grubo sjeckani<\/li>\n<\/ul>\n<h5>PRIPREMA<\/h5>\n<p>TOSTIRANJE \u00a0LJE\u0160NJAKA<\/p>\n<ol>\n<li>Pe\u0107nicu ugrijte na 180 stupnjeva. Pripremite lim za pe\u010denje na kojem \u0107ete tostirati lje\u0161njake. Treba vam 150 g za beze kore i jo\u0161 20-ak grama za dekoraciju.<\/li>\n<li>U ugrijanu pe\u0107nicu stavite lje\u0161njake na limu za pe\u010denje. Pecite ih 10-ak minuta. Osjetit \u0107ete lijep, ora\u0161ast miris.<\/li>\n<li>Tostirane lje\u0161njake prebacite u \u010distu kuhinjsku krpu, prekrijte ih te ih mije\u0161ajte dlanovima kako bi skinuli koru. Ovo radite dok su lje\u0161njaci topli.<\/li>\n<li>Dio lje\u0161njaka (20-ak grama) odvojite. Njih no\u017eem nare\u017eite na krupne komade.<\/li>\n<li>Preostale olju\u0161tene lje\u0161njake sitno sameljite.<\/li>\n<\/ol>\n<p>BEZE KORE<\/p>\n<ol>\n<li>Pe\u0107nicu ugrijte na 130 stupnjeva. Pripremite tri papira za pe\u010denje. Na svakom nacrtajte krug promjera 18 centimetara.<\/li>\n<li>Bjelanjke tucite mikserom po\u010dev\u0161i od najsporije brzine do najbr\u017ee. Mikser vrtite u smjeru kazaljke na satu kako bi bjelanjci bili \u0161to prozra\u010dniji. Kada bjelanjci poprime oblik oblaka, ali jo\u0161 uvijek nisu \u010dvrsti. Dodajte cream tartar ili \u0161krobno bra\u0161no. Zatim dodajte \u0161e\u0107er iz tri intervala uz stalno miksanje.<\/li>\n<li>Bjelanjci su gotovi kada me\u0111u prstima vi\u0161e ne osjetite \u0161e\u0107er. Za ovo \u0107e vam trebati otprilike 4-5 minuta miksanja nakon \u0161to ste dodali \u0161e\u0107er.<\/li>\n<li>Sada \u0161patulom nje\u017eno umije\u0161ajte mljevenje lje\u0161njake i kakao u prahu.<\/li>\n<li>Beze smjesu prebacite u slasti\u010darsku vre\u0107icu s okruglim nastavkom. Pomo\u0107u vre\u0107ice istisnite smjesu tako da radite krugove po\u010dev\u0161i od sredine (pogledaj sliku).<\/li>\n<li>Beze kore postavite na dvije re\u0161etke te ih pecite 1 sat. Nakon toga kore ostavite u uga\u0161enoj i malo od\u0161krinutoj pe\u0107nici dok se ne ohlade do kraja.<\/li>\n<\/ol>\n<p>\u010cOKOLADNA KREMA<\/p>\n<ol>\n<li>Mlijeko ulijte u lonac s debljim dnom. Dodajte mu sjemenke vanilije i mahunu. Neka vam se ugrije do vrenja te ga potom maknite s vatre.<\/li>\n<li>Za to vrijeme u posudi stavite \u017eumanjke. Dodajte im \u0161e\u0107er pa ih pjenja\u010dom izradite. Sada dodajte prstohvat soli i gustin. Pjenja\u010dom sve pove\u017eite.<\/li>\n<li>Iz mlijeka izvadite mahunu vanilije. U tankom mlazu ga dodajte smjesi \u017eumanjaka, \u0161e\u0107era i gustina uz stalno mije\u0161anje.<\/li>\n<li>Kada ste dodali sve mlijeko, kremu prebacite u lonac u kojem ste grijali mlijeko te ga vratite na srednje jaku vatru. Mije\u0161ajte pjenja\u010dom cijelo vrijeme dok se krema ne zgusne. Za ovo \u0107e vam trebati par minuta.<\/li>\n<li>\u00a0U kremu dodajte maslac sobne temperature i \u010dokoladu iskidanu na kockice. Dobro promije\u0161ajte kako bi se sve sjedinilo.<\/li>\n<li>Gotovu kremu prebacite u padelu i prekrijte prozirnom folijom kako bi se do kraja ohladila.<\/li>\n<\/ol>\n<p>KARAMEL KREMA<\/p>\n<ol>\n<li>\u00a0U posudu stavite hladno vrhnje za \u0161lag. Izradite ga mikserom. Kada se \u0161lag krene formirati dodajte dvije \u017elice karamela i nastavite miksati dok ne dobijete srednje \u010dvrstu kremu. Karamel vam treba biti teku\u0107i. Ako vam je tvrd rastopite ga u mikrovalnoj ili ga s teglicom u kojoj se nalazi uronite u kipu\u0107u vodu dok vam ne omek\u0161a.<\/li>\n<\/ol>\n<p>SLAGANJE<\/p>\n<ol>\n<li>Na pladanj za torte postavite beze koru. Pomo\u0107u slasti\u010darske vre\u0107ice s okruglim nastavkom postavite \u010dokoladnu kremu. Koristite se slasti\u010darskom vre\u0107icom s manjim nastavkom i za karamel kremu.<\/li>\n<li>Na kremu postavite drugu beze koru, na jednak na\u010din stavite obje kreme.<\/li>\n<li>Postavite tre\u0107u koru. Sredinu ukrasite s malo karamel kreme.
