Sam naziv dulce de leche (\u010ditaj dulse de le\u010de) na \u0161panjolskom zna\u010di slatko od mlijeka.<\/p>\n<p>&nbsp;<\/p>\n<p>Za njegovu pripremu mo\u017eete koristiti kondezirano mlijeko i od njega napraviti svoj karamel ili krenuti od po\u010detka sa svim sastojcima. Napisati cu vam oba postupka.<\/p>\n<p>&nbsp;<\/p>\n<p>Mlije\u010dni karamel mi je divan kao preljev za sladolede, pala\u010dinke, torte, kao punjenje za keksi\u0107e i sl. Savr\u0161eno se uklapa sa \u010dokoladnim biskvitima, ali i s kremastim cheesecake-om. Ako ste ljubitelj karamela ovaj recept \u0107ete obo\u017eavati.<\/p>\n<p>&nbsp;<\/p>\n<p>Za dulce de leche \u0107e vam trebati mlijeko, koristite punomasno (s 3,6 % m.m.) i \u0161e\u0107er (bijeli kristal). Ja koristim i maslac kako bi mi karamel imao puniji i kremastiji okus te sodu bikarbonu (ona utje\u010de na samu boju karamela, s njom vam karamel ima divnu sme\u0111u nijansu). I na kraju, prekrasna vanilija. Neka vam vatra bude ja\u010da dok mlijeko ne zakuha. Smanjite vatru na laganu pa dodajte preostale sastojke (maslac iskidan na kockice, sodu bikarbonu i sjemenke vanilije).<\/li>\n<li>Povremeno mije\u0161ajte kako vam mlijeko ne bi zagorjelo na dnu lonca.<\/li>\n<li>Kada se karamel po\u010dne zgu\u0161njavati (nakon 1, 1-5 h) tada mije\u0161ajte u\u010destalije.<\/li>\n<li>Kada ste zadovoljni gusti\u0107om karamela, nakon 1,5 do 2 sata, tada ugasite vatru i va\u0161 dulce de leche prebacite u sterilizirane posude (ja koristim staklenke). Ukupna koli\u010dina dulce de leche karamela \u0107e vam biti duplo manja od po\u010detne koli\u010dine mlijeka.<\/li>\n<li>Dulce de leche mo\u017eete odmah koristiti. Ako ga \u017eelite spremiti, tada karamel prvo ohladite na sobnoj temperaturi pa ga prebacite u hladnjak.<\/li>\n<li>Dulce de leche potro\u0161ite unutar mjesec dana.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<h5>TIPS &amp; TRICKS<\/h5>\n<ol>\n<li><em>\u00a0DULCE DE LECHE OD KONDEZIRANOG MLIJEKA <\/em>Ako \u0107ete koristiti kondezirano mlijeko tada samo njega kuhajte dok ne dobijete karamel. Nisu vam potrebni drugi sastojci. Kondezirano mlijeko mo\u017eete prona\u0107i u staklenci i u limenci. Kondezirano mlijeko u limenci kuhajte tako da limenku stavite u kipu\u0107u vodu, smanjite vatru na laganu i kuhate 2 sata. Kondezirano mlijeko u staklenci ulijte u lonac te ga tako nastavite kuhati.<\/li>\n<li>Karamel \u0107e vam se u hladnjaku stisnuti pa ga ne\u0107ete mo\u0107i koristiti kao preljev.
