Od tada sam isprobala razne varijante i stalno sam u potrazi za savr\u0161enom kombinacijom.<\/p>\n<p>&nbsp;<\/p>\n<p>Na blogu imate recept za <span style=\"color: #ffcc00;\"><a style=\"color: #ffcc00;\" href=\"http:\/\/bakeme.com.hr\/focaccia\/\">focacciu<\/a><\/span> bez prethodne pripreme poolisha. To mi je godinama bio najdra\u017ei recept. Na svim obiteljskim okupljanjima sam je \u201cmorala\u201d raditi. Onda sam otkrila ovaj recept i potpuno me odu\u0161evio. I dalje je moram raditi. Focaccia je omiljen kruh mojoj obitelji.<\/p>\n<p>&nbsp;<\/p>\n<p>Tijesto je mekano i prozra\u010dno. Savr\u0161eno upija maslinovo ulje i sve je tako balansirano, a focacccia ostaje svje\u017ea i sljede\u0107i dan.<\/p>\n<p>&nbsp;<\/p>\n<p>Priprema poolisha (predtjesta, predfermenta) je poprili\u010dno jednostavna i traje doslovno 15 sekundi. To je sve! Poolish je najbolje napraviti ve\u010der prije nego \u0107ete pripremati focacciu.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Focacciu mo\u017eete samo posuti krupnom soli ili soli i ru\u017emarinom. Mo\u017eete joj nadodati zelene ili crne masline, raj\u010dice, za\u010dine po \u017eelji i sli\u010dno. suhog kvasca<\/li>\n<\/ul>\n<p>TIJESTO<\/p>\n<ul>\n<li>340 g glatkog bra\u0161na<\/li>\n<li>100 ml mlake vode<\/li>\n<li>70 g maslinovog ulja<\/li>\n<li>14 g soli<\/li>\n<li>4 g suhog kvasca<\/li>\n<\/ul>\n<p>DODATNO<\/p>\n<ul>\n<li>10- ak\u00a0 maslina (ja koristim zelene, otko\u0161tene)<\/li>\n<li>5-10 kom mini raj\u010dica<\/li>\n<li>dvije gran\u010dice ru\u017emarina<\/li>\n<li>\u017elica krupne morske soli (ja koristim cvijet soli)<\/li>\n<li>maslinovo ulje za premazivanje<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h5>PRIPREMA<\/h5>\n<p>1.DAN<br \/>\nPRIPREMA POOLISH-a ILI PREDTIJESTA<\/p>\n<ol>\n<li>Pripremite poolish ili predtijesto tako da u posudu stavite bra\u0161no, vodu i kvasac i sve dobro pomije\u0161ate. Pripazite da vam ne ostane suhih djelova tijesta.<\/li>\n<li>Zdjelu pokrijte prozirnom folijom i ostavite 12 h na sobnoj temperturi.<\/li>\n<\/ol>\n<p>2. DAN<br \/>\nPRIPREMA TIJESTA<\/p>\n<ol>\n<li>Va\u0161 poolish ili predtjesto je sada naraslo i udvostru\u010dilo se. Dodajte mu sastojke za tijesto \u2013 340 g bra\u0161na, 4 g suhog kvasca, 14 g soli, 100 ml mlake vode i 70 g maslinovog ulja. Pazite da kvasac stavljate na jednu stranu posude s poolish-om, a da sol stavite na drugu stranu kako vam sol ne bi poni\u0161tila djelovanje kvasca.<\/li>\n<li>Zamijesite tijesto. Mijesite ga u robotu s nastavkom za tijesto ili ru\u010dno na lagano pobra\u0161njenoj radnoj podlozi. Nemojte dodavati vi\u0161e bra\u0161na iako vam u po\u010detku tijesto mo\u017ee izgledati vla\u017eno i nepovezano. Svako malo tijesto dignite u zrak i bacite na radnu povr\u0161inu. Ovo \u0107e pomo\u0107i kod razvijanja glutena. Tijesto mijesite 20-ak minuta, odnosno dok vam test prozora ne uspije (pogledaj pod tips &amp; tricks). Tijesto \u0107e biti mekano i svilenkansto.<\/li>\n<\/ol>\n<p>OBLIKOVANJE I PE\u010cENJE<\/p>\n<ol>\n<li>Tijesto prebacite u auljenu posudu i pustite da odstoji najmanje 1 sat. Posudu pokrijte prozirnom folijom.<\/li>\n<li>Pripremite lim za pe\u010denje pribli\u017enih dimenzija 40 x 30 centimetara. Prema\u017eite ga maslinovim uljem.<\/li>\n<li>Nakon \u0161to se tijesto udvostru\u010dilo prebacite tijesto na lim. Rukama ga razvucite tako da vam prekrije cijeli lim. Pokrijte ga prozirnom folijom i ostavite jo\u0161 sat vremena.<\/li>\n<li>Pe\u0107nicu ugrijte na 200 stupnjeva.<\/li>\n<li>Sada u tijestu napravite rupice tako \u0161to \u0107ete ga probosti prstom ili kuhinjskom dr\u0161kom. Neka rupice budu ravnomjerno raspore\u0111ene po cijeloj du\u017eini tijesta.<\/li>\n<li>Tijesto prema\u017eite maslinovim uljem.<\/li>\n<li>Mini raj\u010dice prepolovite na pola. Odvojite listi\u0107e ru\u017emarina s gran\u010dice. U dio rupica zabodite masline i polovice raj\u010dica. U neke rupice poslo\u017eite listi\u0107e ru\u017emarina. Cijelu focacciu pospite krupnom morskom soli.<\/li>\n<li>Focacciu pecite 25-30 minuta, odnosno dok ne poprimi lijepu rumenu boju.<\/li>\n<li>Ohla\u0111enu focacciu dodatno prema\u017eite tankim slojem maslinovog ulja.<\/li>\n<li>Poslu\u017eite je uz maslinovo ulje, komad sira ili po \u017eelji.<\/li>\n<\/ol>\n<h5>TIPS &amp; TRICKS<\/h5>\n<ul>\n<li>Kako bi bili sigurni da ste tijesto dobro zamijesili potrebno je provjeriti njegovu elasti\u010dnost. To \u0107ete napraviti tako da uzmete dio tijesta i lagano ga ravu\u010dete prstima. Ako vam ne puca pod prstima ve\u0107 se da lijepo razvu\u010di tada ste ga dobro zamijesili.
