Ovo je pravi klasik francuske gastronomije i planetarno popularan desert. Kada spominjemo creme brulee govorimo o finoj custrad kremi i karameliziranom \u0161e\u0107eru na vrhu. Ne znam za vas, ali meni je ovaj opis dovoljan da se zaljubim u ovaj desert.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Skoro pa u svakom restoranu mo\u017eete nai\u0107i na creme brulee u svojoj ponudi, a \u010desto je oboga\u010den nekom aromom ili novim okusom. Creme brulee mo\u017eete raditi u klasi\u010dnoj, slatkoj, pa i slanoj varijanti. Uistinu, kombinacijama nema kraja, dovoljno je samo malo ma\u0161te.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Na jednoj od radionica smo radili razne varijante creme brulee-a, od onih oboga\u010denih agrumima, \u010dajevima, pa do creme brulee-a s lososom. I sve mo\u017ee! Ba\u0161 sve!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Za creme brulee vam trebaju posudice u kojima \u0107e se pe\u0107i, padela u koju \u0107ete postaviti posudice i uliti vodu ( tehnika pripreme poznata kao bain-marie) i brener. Ako nemate brener, ne brinite, napisat \u0107u vam kako da karamelizirate \u0161e\u0107er pomo\u0107u pe\u0107nice. Moje posudice su promjera 8,5 centimetara i doza je dostatna za 5 posudica.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Ujedno, jako je va\u017eno da se pridr\u017eavate omjera iz recepta. Trebat \u0107e vam vrhnje s 33% masno\u0107e, odnosno vrhnje za \u0161lag, punomasno mlijeko s 3,5% ili 3,8% mlije\u010dne masti. Punomasno mlijeko mo\u017eete zamijeniti mlijekom s manjim udjelom masno\u0107e, ali uzmite u obzir da to utje\u0107e na finalni rezultat va\u0161eg creme brulee-a, njegovu kremoznost i teksturu.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Tako\u0111er, \u017eumanjke izva\u017eite. Za savr\u0161eni creme brulee vam treba 100 g \u017eumanjaka \u0161to je otprilike 5 \u017eumanjaka jaja L veli\u010dine. Pripazite na mjehuri\u0107e zraka koji vam mogu naru\u0161iti vanjski izgled creme brulee-a, okusom \u0107e ostati isti ali ne\u0107e biti onako lijep. Ne brinite, postoji nekoliko trikova i za te mjehuri\u0107e zraka. punomasno mlijeko, 3,5% ili 3,8% mlije\u010dne masti)<\/li>\n<li>90 g \u0161e\u0107era<\/li>\n<li>100 g \u017eumanjaka (5 \u017eumanjaka od L jaja)<\/li>\n<li>1\/2 mahune vanilije<\/li>\n<\/ul>\n<p>DODATNO<\/p>\n<ul>\n<li>60 g sme\u0111eg \u0161e\u0107era<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h5>PRIPREMA<\/h5>\n<ol>\n<li>Pe\u0107nicu ugrijte na 140 stupnjeva.<\/li>\n<li>U srednje veliki lonac ulijte vrhnje za \u0161lag i mlijeko.<\/li>\n<li>Izdubite mahunu vanilije pa je dodajte mlijeku i vrhnju. Pustite da zakuha. Maknite s vatre i stavite po strani. Izvadite mahunu vanilije.<\/li>\n<li>U zasebnoj posudi \u017eumanjcima postepeno dodajte \u0161e\u0107er. Pjenja\u010dom ih umutite. Neka se sjedine ali ih nemojte previ\u0161e lupati (zapjeniti) kako se ne bi stvorilo previ\u0161e zraka.<\/li>\n<li>Zatim postepeno dolijevajte ugrijano vrhnje i mlijeko smjesi jaja i \u0161e\u0107era pri \u010demu cijelo vrijeme mije\u0161ajte pjenja\u010dom.<\/li>\n<li>Smjesu ulijte u pripremljene kalupe. Ostavite pola centimetra do vrha prazno.<\/li>\n<li>Ako primjetite mjehuri\u0107e zraka na povr\u0161ini smjese, lagano lupnite kalup o radnu podlogu, to \u0107e vam pomo\u0107i da se zrak ispu\u0161e. Tako\u0111er ih mo\u017eete spaliti brenerom lagano prelaze\u0107i po povr\u0161ini smjese ili ih dotaknite vrhom \u010distog kuhinjskog papira kako bi niestali. Mjehuri\u0107i zraka \u0107e naru\u0161iti izgled povr\u0161ine va\u0161eg creme brulee-a pa ih svakako odstranite prije pe\u010denja.<\/li>\n<li>Sada napunjene kalupe prebacite u padelu pa ulijte vru\u0107u vodu do pola padele. Napunjenu padelu oprezno stavite u pe\u0107nicu na 40-ak minuta. Du\u017eina pe\u010denja ovisi o intezitetu va\u0161e pa\u0107enice pa obratite pa\u017enju na sami izgled creme brulee-a. Creme brulee vam treba biti poput \u017eelea kad ga prodrmate, a da je i dalje mekan iznutra, izgledat \u0107e vam sirovo, to je u redu.<\/li>\n<li>Kalupe s creme brulee-ima oprezno izvadite iz padele. Ostavite ih na sobnoj temepraturi 30 minuta do sat vremena. Nakon \u0161to su se ohladili prekrijte ih prozirnom folijom, a potom ih prebacite u hladnjak na 2 do 3 sata ili preko no\u0107i.<\/li>\n<li>Nakon \u0161to se creme brulee ohladio, izvadite ga iz hladnjaka. Na svaki stavite \u017elicu sme\u0111eg \u0161e\u0107era (ako koristite ve\u0107e kalupe stavite 1,5 \u017elicu). \u0160e\u0107er rasporedite ravnomjerno po povr\u0161ini creme brulee-a pa ga karamelizirajte brenerom. Pripazite da vam plamen nije direktno na \u0161e\u0107eru kako vam ne bi izgorio ve\u0107 se ravnomjerno i postepeno karamelizirao.<\/li>\n<li>Creme brulee ostavite do 5 minuta da se ohladi te ga potom poslu\u017eite.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>TIPS &amp; TRICKS<\/p>\n<ul>\n<li>\u0160to ako nemam brener?<\/li>\n<\/ul>\n<p>Ako nemate brener, \u0161e\u0107er mo\u017eete karamelizirati pomo\u0107u gornjeg grija\u010da na pe\u0107nici. U toj varijanti pripazite da na creme brulee postavite tanki sloj \u0161e\u0107era koji \u0107ete ravnomjerno rasporediti po povr\u0161ini. Gornji grija\u010d pe\u0107nice upalite na najvi\u0161e stupnjeva, a re\u0161etku postavite na najgornju poziciju. Kada se pe\u0107nica dovoljno ugrije, postavite kalupe na lim za pe\u010denje (hladni) te ih stavite na najgornju re\u0161etku. Neka vam vrh kalupa bude \u0161to bli\u017ee grija\u010du. Kalupe dr\u017eite u pe\u010dnici najvi\u0161e jednu do dvije minute, odnosno dok vam se \u0161e\u0107er nije karamelizirao.<\/p>\n<ul>\n<li>Mogu li zamjeniti mahunu vanilije s aromom?<\/li>\n<\/ul>\n<p>Ako nemate mahunu vanilije, tada koristite aromu vanilije i dodajte 1 \u017eli\u010dicu. \u017dli\u010dicu dodajte stu\u010denim \u017eumanjcima i \u0161e\u0107eru neposredno prije dodavanja vrhnja i mlijeka.
