Baka je bila rodom iz Drni\u0161a, a aramba\u0161i\u0107i su tradicionalno jelo toga kraja. Smatra se da su dobili ime po haramba\u0161ama, vo\u0111ama alkara. Naime, aramba\u0161i\u0107i se sla\u017eu u lonac za kuhanje jedan do drugog, poput vojnika.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Znate li da su aramba\u0161i\u0107i na popisu nematerijalnih kulturnih dobara Ministarstva kulture RH?<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Razlika aramba\u0161i\u0107a i sarmi je u tome \u0161to aramba\u0161i\u0107i nemaju ri\u017eu, ali i u obradi mesa. Naime, meso za aramba\u0161i\u0107e se ru\u010dno sjecka. Kako ne bi bilo suho, osim odabira mesa, bitno je odabrati i pravu pancetu koja ce mu dati aromu i dovoljno masno\u0107e. Meso za aramba\u0161i\u0107e \u0107emo samljeti kako bi ubrzali postupak.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Baka je svake godine radila aramba\u0161i\u0107e za cijelu obitelj i ovo nam je jedno od najdra\u017eih jela. Uvijek bi se kuhali na Staru godinu i jeli na proslavama Nove. Tako\u0111er, zimski mjeseci bi bili nezamislivi bez djedovog kiselog kupusa i bakinih aramba\u0161i\u0107a.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Bakin recept se nalazi na posebnom mjestu u mojoj kuharici, a tko god ih proba tra\u017ei jo\u0161. Ovo je jedan od recepata koje sam jako \u017eeljela podijeliti s vama. Napisat \u0107u vam svaki detalj pripreme, tako da vam kod njihove izrade bude poznat svaki korak. Ako meso ne meljete sami, ve\u0107 kupujete samljeveno, tada u sjeckalici usitnite luk, \u010de\u0161njak i per\u0161in, a pancetu iskidajte na \u0161to manje kockice. Usitnjene sastojke dodajte mljevenom mesu.<\/li>\n<li>\u00a0Kada imate samljevene sve sastojke i pomije\u0161ane zajedno, dodajte za\u010dine. Sve pove\u017eite (ja se koristim rukama) i posudu s mesom stavite po strani.<\/li>\n<li>Glavu kupusa o\u010distite na na\u010din da otkidate listove od sredi\u0161njeg dijela. Ako su najmanji listovi (oni pri sredini glave) maleni, odvojite ih i iskidajte na trakice, njih \u0107emo upotrijebiti s ribanim kupusom.<\/li>\n<li>Svaki list properite vodom kako vam aramba\u0161i\u0107i ne bi bili pre kiseli. Opranim listovima odstranite vrh podebljanog dijela (\u017eilu) lista, jer \u0107e ostati \u017eilavija pri kuhanju.<\/li>\n<li>Kada ste oprali i odstranili zadebljani vi\u0161ak, vrijeme je za motanje aramba\u0161i\u0107a. Uzmite komad mljevenog mesa ( moj te\u017ei po 75 grama svaki) pa ga postavite na dno lista i zamotajte do vrha. Sada uvucite lijevu i desnu stranu lista kako bi vam araba\u0161i\u0107 bio zamotan sa svih strana (pogledaj sliku ispod). Ako su vam neki listovi pre veliki, prije nego ugurate lijevu i desnu stranicu lista kupusa, slobodno je skratite no\u017eem.<\/li>\n<li>Procijedite naribani kupus i properite ga kroz vodu. Ako volite kiseliji kupus onda ovaj korak presko\u010dite (iako savjetujem da ga properete).<\/li>\n<li>Na dno lonca (ja koristim onaj sa \u0161irim dnom zapremnine 8 litara) postavite naribani kupus (u tankom sloju) i malo komada ko\u017ee od pancete. Na donji sloj poslo\u017eite aramba\u0161i\u0107e jedan do drugoga. Ponovo stavite tanki sloj ribanog kupusa i novi sloj aramba\u0161i\u0107a. Ovo ponavljajte dok ne potro\u0161ite sve aramba\u0161i\u0107e. Vi\u0161ak ribanog kupusa spremite po strani, njega \u0107emo nadodati kasnije sa suhim mesom.<\/li>\n<li>Aramba\u0161i\u0107e zalijte vodom tako da prekrijete zadnji sloj aramba\u0161i\u0107a do pola. Nadodajte za\u010dine i koncentrat raj\u010dice.<\/li>\n<li>\u00a0Kada vam aramba\u0161i\u0107i zakuhaju smanjite ih na lagano i kuhajte dva sata.<\/li>\n<li>Nakon dva sata kuhanja dodajte suho meso i kobasice te sve prekrijte preostalim ribanim kupusom. Po potrebi nadodajte jo\u0161 malo vode (do ruba zadnjeg sloja, nemojte dodati previ\u0161e) i kuhajte jo\u0161 1,5 sat. Za vrijeme kuhanja lonac primite za ru\u010dke i lagano protresite, nemojte mije\u0161ati. Ovo ponovite svega nekoliko puta. Kuhajte poklopljeno cijelo vrijeme.<\/li>\n<li>Nakon 3,5 sata kuhanja na laganoj vatri, va\u0161i aramba\u0161i\u0107i su gotovi.<\/li>\n<li>Pustite ih da malo odstoje i poslu\u017eite ih s prilogom poput pire krumpira ili po \u017eelji.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<h5>TIPS &amp; TRICKS<\/h5>\n<ul>\n<li>Ako ste ljubitelj sarmi, mljevenom mesu samo nadodajte ri\u017eu.
