U njemu je smje\u0161teno moje djetinjstvo i svi okusi Dalmacije uz koju sam vezana. Ka\u017eu da \u010dovjek treba ra\u0161iriti svoja krila, upoznati razne kulture, obi\u010daje i vidjeti svijet, ali da se uvijek najljep\u0161e vratiti svojim korijenima. E, pa ova \u0161al\u0161a je meni upravo to, bakina kuhinja i moji korijeni.<\/p>\n<p>&nbsp;<\/p>\n<p>Kada sam bila malena ovo jelo sam zvala &#8220;ono \u0161to se vuti&#8221;, odnosno, tjestenina koja se vrti (\u0161pageti) s umakom od \u0161al\u0161e od pomidora. Oduvijek mi je bilo omiljeno. Vjerujem kako je upravo ovo jelo probudilo moju ljubav za kuhanjem. Gledala bi baku kako ga priprema i upijala svaki pokret njene ruke. Njezina \u0161al\u0161a je, za mene, bila \u010dista umjetnost.<\/p>\n<p>&nbsp;<\/p>\n<p>Za pripremu dobre \u0161al\u0161e od pomidora vam treba samo nekoliko sastojaka i vrijeme. Sva mudrost le\u017ei u odabiru dobre pomidore, du\u017eini kuhanja i svje\u017eem bosiljku. Bez maslinovog ulja nema ni dobre \u0161al\u0161e, ono vam je tako\u0111er potrebno. Jednostavno je, jako!<\/p>\n<p>&nbsp;<\/p>\n<p>Donosim vam \u0161al\u0161u od pomidora spremljenu na dva na\u010dina.<\/p>\n<p>Prvi je klasi\u010dni, onaj u kojem se \u0161al\u0161a kuha na umjerenoj vatri i gdje pasiramo pomidore. Ovo je ujedno i moj najdra\u017ei odabir.<\/p>\n<p>Drugi na\u010din je ne\u0161to br\u017ei, \u0161al\u0161u sam pripremila u pe\u0107nici. U ovoj varijanti sam pomidore ostavila iskidane na komade i dodala papriku. Ja sam koristila doma\u0107u sortu \u0161ljivar. Operite ih i prepolovite. Ako su ve\u0107e iskidajte ih na \u010detvrtine.<\/li>\n<li>Luk usitnite i na malo maslinovog ulja prepr\u017eite dok ne postane staklast.<\/li>\n<li>Dodajte pomidore i kuhajte ih na umjerenoj vatri 20 minuta. Nekoliko puta ih promije\u0161ajte. U ovoj fazi su pomidore trebale pustiti vodu i potpuno omek\u0161ati.<\/li>\n<li>Na \u010distu posudu postavite pasirku, polako dodajite kuhane pomidore i pasirajte ih. Kada ste sve pomidore ispasirali, \u0161al\u0161u prebacite nazad u lonac i nastavite kuhati. Vatru smanjite na laganu.<\/li>\n<li>Dodajte \u0161e\u0107er, sol i papar. Promije\u0161ajte pa dodajte svje\u017ee listove bosiljka koje ste prethodno oprali.<\/li>\n<li>Na kraju dodajte \u010de\u0161njeva \u010de\u0161njaka koje ste ostavili u komadu.<\/li>\n<li>\u0160al\u0161u kuhajte na laganoj vatri dok voda ne ispari, a \u0161al\u0161a ne potamni i ne zgusne se. Primjetit \u0107ete ulje na povr\u0161ini \u0161al\u0161e. Ja sam svoju \u0161al\u0161u kuhala 2,5 sata na laganoj vati.<\/li>\n<li>Du\u017eina kuhanja ovisi o sorti pomidora, njihovoj zrelosti, koli\u010dini vode u njima kao i samoj koli\u010dini koju kuhate. Vodite se time da se \u0161al\u0161a kuha od 2 do 3 sata u prosijeku.<\/li>\n<li>Za vrijeme kuhanja \u0161al\u0161u mije\u0161ajte. Pri kraju kuhanja, kada se voda po\u010dinje reducirati, mije\u0161ajte je vi\u0161e puta kako biste izbjegli lijepljenje \u0161al\u0161e na dnu lonca.<\/li>\n<li>\u0160al\u0161u probajte, ako se osjeti kiselost pomidora, dodajte jo\u0161 \u017eli\u010dicu \u0161e\u0107era.<\/li>\n<li>Kada je \u0161al\u0161a gotova, ugasite je, pustite da odstoji 10-ak minuta, izvadite komade \u010de\u0161njaka i preostale listove bosiljka pa umije\u0161ajte tri \u017elice maslinovog ulja.<\/li>\n<li>Skuhajte svje\u017eu tjesteninu i poslu\u017eite je toplu. Ja sam koristila doma\u0107u sortu \u0161ljivar.<\/span> Od paprika sam koristila jednu sorte roga i dvije sorte babura. Koli\u010dina paprika i izbor sorte ovisi o vama.<\/li>\n<li>Pomidore operite i ogulite im ko\u017eu. Manje prepolovite, a ve\u0107e iskidajte na \u010detvrtine. Paprike operite, o\u010distite od peteljke i sjemenki pa ih iskidajte na tanje fete.<\/li>\n<li>Pe\u0107nicu ugrijte na 200 stupnjeva.<\/li>\n<li>Pomidore i paprike poslo\u017eite po limu za pe\u010denje.<\/li>\n<li>Luk usitnite pa ga dodajte pomidorama i paprikama. Dodajte i \u010de\u0161njeve \u010de\u0161njaka u komadu, za\u010dine (sol, kajenski papar i\u00a0\u010dili) i bosiljak.<\/li>\n<li>Sve dobro promije\u0161ajte i polijte s tri \u017elice maslinovog ulja.<\/li>\n<li>Stavite pe\u0107i na sat, sat i pol vremena, odnosno dok voda ne ispari.<\/li>\n<li>Za vrijeme pe\u010denja \u0161al\u0161u promije\u0161ajte nekoliko puta.<\/li>\n<li>Ovakvu \u0161al\u0161u poslu\u017eite s pe\u010denim mesom, na bruschettima s mozzarelom, uz tjesteninu i sl.<\/li>\n<li>Ja sam je servirala u zdjelici sa \u010dipsom od parmezana.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>TIPS &amp; TRICKS<\/p>\n<ul>\n<li>Neka vam pomidore budu \u0161to zrelije za kuhanje \u0161al\u0161e. Ako vam nisu dovoljno zrele, ostavite ih koji dan na zraku pa ih onda spremite.<\/li>\n<li>Svje\u017ei bosiljak mo\u017eete zamijeniti su\u0161enim. Savjetujem da svakako koristite svje\u017ei, on daje posebnu aromu \u0161al\u0161i.<\/li>\n<li>Ako su pomidore kiselije, dodajte jo\u0161 malo \u0161e\u0107era. \u0160e\u0107er je najbolje dozirati po osobnom okusu, a i pomidore se razlikuju po svojoj kiselosti.<\/li>\n<li>Na jednoj od slika je opisana priprema za \u010dips od parmezana.<\/li>\n<li>Kuhanu \u0161al\u0161u od pomidora mo\u017eete spremiti u sterilizirane staklenke i pohraniti me\u0111u ostalu zimnicu.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Dobar tek!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u0160al\u0161a od pomidora moje je omiljeno jelo, bez dileme.
